FTC STANDARD SHEAR COMPRESSION CELL (CS-1)
The Kramer Shear Cell from Food Technology Corporation is the single most successful test fixture used for food texture measurement as it faithfully reproduces what happens when a product is consumed. The objective measurements made are very closely related to the human experience of chewing foods and is used throughout the world to grade the textural properties of food products ranging from apples to zucchini.
The fixture compresses, shears and extrudes the sample to measure firmness, fibrousness, tenderness and similar mouthfeel properties of food products.
The use of the Kramer Shear Cell means a larger sample size can be tested, which helps to minimise standard deviations in test results, common to tests measuring fewer samples. Particulates, in particular can be easily assessed using this fixture to measure them in bulk rather than more awkwardly in single form.
The FTC Standard Shear Compression Cell or “Kramer” Shear Cell (CS-1) consists of a sample holder, slotted lid and movable blade assembly. The inside of the sample holder measures 2.6” (66mm) wide by 2.6” (66mm) long by 2.5” (64mm) deep, and holds a volume of 16.9 cubic inches (227ml). The cell lid has 10 slots, which accommodate the 10 parallel, 1/8” (3.2mm) thick blades. The movable blades are attached to the load cell and are forced through the test sample producing a force proportional to the sum of both the shear and compression failure point of the test sample.

TMS LIGHTWEIGHT SHEAR BLADE SET
Food Technology Corporation’s TMS shear blade set has been designed to replicate the specification of the original Warner-Bratzler blade. The test set should be used in conjunction with the TMS standard fixture table on the TMS-Pro or TMS-Console texture analyzers to allow blades to pass completely through samples during shear testing.
Shear blades provide an excellent indication of a cross sectional characteristics. Natural variation
and irregularities present are essentially averaged and accommodated by the blades geometry.
A single blade cuts through the sample creating a combination of shearing, tearing and compression forces. Stress initiates in compression mode until the sample yields and the blades starts to cut into the sample.
Applications include;
• Hardness of nougat bars
• Crumb hardness in fruited cakes
• Stalk softening in frozen broccoli florets
• Ripening changes as indicated by softness in bananas
• Slicing hardness of hard cheeses
• Shear toughness of chicken breast
The test set comprises of a blade holder with 2 locking screws. A central slot allows free movement of the blade to limit friction during analysis. Each blade is manufactured from stainless steel, reversible and 1mm thick. The first blade has a plane flat bottom and a 20mm notched end. The second has a 44mm and a 32mm inverted “V” with small central cut out. The stainless steel blades travel through 35mm high guide arms positioned 50mm apart into a 1.4mm wide slot at the base – these dimensions govern the size of samples used in assembly.

Designed exclusively for pea tests, the Food Technology Corporation (FTC) Model TU-12 Tenderometer is a cost-effective alternative for determining the maturity of fresh peas. Brookfield Engineering introduces the New CT3 Texture Analyzer, the most powerful, lowest cost, stand-alone Texture Analyzer ever produced. This new generation instrument features not only the traditional Compression Mode, but now includes a brand new Tension Mode. Now manufacturers can test their products and the packaging as well. Ear Measuring Instrument, Model 126
Used to obtain a numerical value of the size of the ears resulting from anisotropy in the material of cylindrical deep-drawn cups (e. g. according to DIN 50 155). The average cup height, the height of the ears in percent and in mm can be read-off at a touch of a button and are shown on the digital display instrument. To enable additional data processing the test instrument can be equipped with interfaces, such as BCD or RS 232 C outputs and with a printer.
