Description

Rapid and cost-effective detection of adulteration and mislabeling of content or origin.

Honey Profiling will be an NMR-based screening method which is developed in a joint effort by Bruker BioSpin GmbH, Alnumed and QSI. For each honey a multitude of parameters related to quality and authenticity will be evaluated simultaneously from a single data set acquired within a few minutes.

Simultaneous identification and absolute quantification of a multitude of relevant parameters (sugars, acids, amino acids, …) with reference to NMR distribution
Development of statistical models for the analysis of authenticity according to honey variety (such as blossom, honeydew, linden, lavender, chestnut, pine) and according to geographical origin
Detection of frauds like addition of rice syrup or other types of sugar
Detection of unexpected and even unknown frauds
