Cleaning with first water, at a temperature of 30° - 40° C.
The purpose of this cleaning is to remove traces of product remaining at the end of the process. This stage is important because when this is done efficiently, cleaning material will be saved at the later stage of cleaning.
Period of cleaning: 5 -10 minutes.
Lye cleaning (caustic soda) - is carried out with a soda concentrate of 1.5% at a temperature of 70-80° C. The main purpose is to remove the fat. Caustic soda is supplied at a concentration of 46%.
Period of circulation: 20- 30 minutes.
Acid cleaning - the purpose is to remove the scale which
accumulates with time, as a result of the poor quality of the water. While the lye cleaning is carried out in short intervals, acid cleaning can be carried out at long intervals. In most cases, cleaning is done with a 0.3% solution. Carbon Acid is usually supplied at a concentrate of 60%.
Period of circulation: 10 -15 minutes at a temperature
of 70° C.
The last rinse - is done with clean water. This water is
returned to the vessel, and is used in the next cycle as the first
cleaning water.
Disinfecting - efficient cleaning is 99% of disinfecting.
The disinfecting material completes the cleaning process. The purpose is to decrease to the minimum the possibility of infection developing mainly in the pipes. The most common disinfecting material is pharacetic Acid. This material is marketed under the name "Oxonia". Concentration degree of the Oxonia in work is 0.01-0.07% on the basis of weight. The temperature of the solution is the temperature of tap water.
