The hot air going into the recipient passes through the product mixture to be dried, causing a bubbling upwards which drags the humidity out of the product and generating a dust which flows into the bags due to the lower pressure inside them, as more and more air and more dust is being generated.
The bags do the job of retaining dusty product and letting the air out without any emissions of particles.
