Description

This steam cooker-stretcher is designed for the production of pasta filata cheese (mozzarella, buffalo mozzarella, pizza cheese) by using as raw material, cow or buffalo curd, fresh or frozen curd .
It is also suitable for the production of analogue mozzarella by using as raw material, powders, rennet casein, starch and vegetable or animal fat.
It is ideal for small level production (from 5 – 20 kg/batch), and for R & D laboratories.
The machine is equipped with with an incorporated electrical steam generator ( ITALIAN PATENT) that can produce the necessary quantity of steam during the stretching phase.
The entire unit is manufactured in AISI 304 stainless steel, and fitted with an electrical panel with PLC and “touch screen” operator panel from which it is possible to control the various stretching – moulding process phases
All the parts in contact with the product are entirely Teflon-coated in order to be non-stick.

The stretcher is complete with:
- Two bi-directional augers, that are controlled by a variable speed INVERTER.
- Steam heated jacket.
- Product stretching is performed either by steam injection, direct into the product or in the double jacket.
- Thermo-regulator to control the product temperature.

Advantages:
More output in the cheese production than the traditional stretching process.
No more fatty liquid to purify due the fact that the water adding will be completely absorbed during the steam cooking
Power savings due to the reduction of steam consumption
Possibility to use fresh and industrial block of curd, buffalo curd, powder ingredients, spices and flavouring.
