This device for the distillation of alcohol is built of copper and bronze. Some parts of the still, less important for the quality of the cognac or brandy, can be built in stainless steel for practical reasons (for example, valves, pipes, condenser).
However, copper remains the most efficient metal to manufacture stills. Copper offers the following advantages: it is malleable; good heat conductor; resistant on fire and wine corrosion. It reacts on certain wine components such as the components of sulphide and the fatty-acids, (this property is favourable for the quality of brandy or cognac): and it is a suitable reactions catalyst between the wine components.
