•The turbo mixer includes the storage tank and the horizontal head turbo emulsifier in a single structure. •It is possible to obtain a continuous mixing with the control of temperature, density, viscosity and aeration of the dough (sponge cake, muffins, whipped creams, jaffa cakes, lady fingers, plum-cakes). •The storage tank is made in stainless steel AISI 304 and it is equipped with a central agitator able to keep the mixture homogeneous. •The head of the turbo mixer is feeded by a monoscrew volumetric pump which ensure a constant product flow with excellent performances. •Power installed on the turbo emulsifier: 7,5 kw. •The head of the turbo mixer is completely made in stainless steel AISI 304. •The rotor and the stator have teeth which intersect step by step and their rotation allows to incorporate air in the dough uniformly. •The stator is double-jacketed to allow the circulation of refrigerating liquid. •The turbo mixer rotation speed is controlled by one inverter. •The injected air is purified by special filters; the quantity of injected air can be adjusted. •A pressure device allows to adjust the working pressure in the head. •Control panel with PLC able to fix the working parameters according to the type of dough to obtain.
