The Aging Booster works by cooling the surface of foods while heating the inside with microwaves.
This device uses highly refined microwave control technology which is 10 times more delicate than a conventional microwave.
Conventional machines use microwaves at 10-100 watts intervals to control the temperature, but the Aging Booster has a finer control system which controls in 1 watt intervals.
The device has 4 advantages:
1-speeds the process of ageing. Heating the inside of foods activates enzymes and encourages the breakdown of proteins, increasing umami flavour and tenderness.
2-electromagnetic waves directly alter the salt content, creating a mellow taste.
3-free water content is reduced. Microwaving cold food often dries it out. Ageing releases umami flavour and reduces the need for trimming.
4-the outer surface is cooled. Food normally starts to decompose from the outside, but with the Aging Booster, thorough cooling prevents bacteria growth.
We envisage sales of the larger size (5kg capacity) Aging Booster both domestically and overseas starting December 2023.
