There are many products that are ‘temperature critical’ and which need testing at a specific non-ambient temperature or range of temperatures to provide reproducible comparative texture analysis results. Such information is far more relevant than ambient testing alone can ever achieve. Samples such as gels, confectionery, waxes and high fat or oil content products are very temperature critical and as such careful equilibrating and stabilising of testing temperature should be considered.
