Starch gelatinization, inactivation of lipolytic enzymes and the best possible preparation of the product for the flaking process, all of this is, among other things, ensured by the hydrothermal SCHULE conditioner. To ensure the optimum preparation for the flaking process, the influence of steam is of utmost importance. It makes the respective product plastically deformable and reduces the percentage of broken grains during flaking.
