AUTOMATIC VACUUM SALTING SYSTEM FOR PRODUCTS TO BE CURED
The Inox Meccanica technology applied to these systems is the result of over 15 years of research and development carried out by our R&D department, with the goal of providing machines that are increasingly reliable, high-performing, and capable of continuously improving production processes.
We manufacture automatic vacuum tumblers with loading capacities ranging from 500 to 4,500 kg, ideal for the salting and preparation of cured products such as prosciutto crudo, speck, bresaola, pancetta, coppa, and lonza.
Our patented vacuum salting system ensures:
Uniform salt distribution, for homogeneous curing;
Reduction of residual water in the meat, improving yield and final product quality;
Greater production efficiency.
Our tumblers can be equipped with an external jacket, temperature-control system, and smoking system, which allow:
Refrigeration, to maintain constant product temperature even in non-conditioned environments;
Heating, for safe vacuum defrosting of meat;
Smoking directly inside the tumbler, to impart an authentic, natural aroma to products while ensuring maximum production efficiency.
In addition, an integrated weighing system with stainless steel load cells and a digital display can be installed, enabling precise control of both processing cycles and product weight.
