Description

Tartufina model extruder for sweet truffles. the Tartufina is an innovative machine that uses hydraulic pressure inside a cylinder to produce large quantities of products using special molds/cartridges based on chocolate, hazelnut, almond, truffle paste and gianduja etc... These, previously made and crystallized inside a tempering machine, can be molded into countless shapes and sizes based on the chosen configuration. The machine allows you to set different processing parameters in order to obtain the desired shapes and dimensions of the final products. Mia Food Tech recommends placing a cooling tunnel alongside the Tartufina to consolidate the shape and structure of the mixture or a DRG-15 or higher model bastinator to dust the products with sugar or cocoa powder.
