Black garlic production process
  • Selection and loading: load high-quality fresh garlic into trays or boxes and place in the fermentation chamber.
  • Heating & humidification: steam or electric heating maintains target temperature (commonly 60–90°C) and humidity (70%–90%).
  • Programmed temperature profile: controller runs a stepped program (for example start ~80°C then gradually lower) to drive the Maillard reaction.
  • Material turning: motorized mixing/turning ensures even exposure and heat distribution in large batches.
  • Monitoring & control: sensors feed data to the PLC which adjusts parameters during the typical 15–30 day fermentation cycle.
