Description

ITECA is constantly seeking the ideal combination between the newest production technologies, industrial line sanitation and high finished product quality. ITECA designs fully automatic lines for the production of high quality bread to always best meet the target market specific needs: this product range includes baguettes, long loaves, ciabatta bread and long fermentation bread. If desired, each of these products can be made with starter. ITECA staff constantly runs laboratory researches and tests on the product with the aim of improving production process and extend the product shelf-life. Each line is specifically studied and designed to enhance quality and features of the desired product: the best technologies to be applied in bread production are analyzed and studied by our technical and technological departments on an ongoing basis, starting from the dough preparation room, continuing on to dough forming and proofing, then to baking and cooling up, ending with packaging. Baking trays inside the line. Suitable for products needing particular support/baking surfaces. Automatic management of the baking trays motion. It requires pre-arranged phase for washing and drying the baking trays. Line requires vertical storage units for baking trays to be stocked during line emptying or production changeovers. Higher energetic waste, due to the need of heating the baking trays during baking and then of cooling them before conveyed back into the circuit.
