The drying tunnel is a closed structure into which a motorised roller has been inserted, which causes the fruit to move forward and rotate, while it is dried by hot air flows. It includes a temperature self-regulation system to constantly maintain a temperature 30° higher than the outside temperature. The heat can be generated by diesel or gas combustion.
