The COMPOSED molds of the LEGOSTAMPO system are designed to be easily handled by automatic machines. The lid is extremely simple, yet rigid, and the pressing springs, like the arms that hold it in place, are part of the mold heads.
The springs have a stroke that makes it possible to use the mold even for products of different weights, as well as to follow the weight loss of the product, which, if important, requires repressing that this type of mold allows. In this way, even for hams produced with traditional technology, it is possible to obtain logs to be sliced that limit cooking waste to the ends only.
The automatic mold press performs the quick and accurate pressing, ensuring the perfect flatness of the lid and the uniform distribution of the product in the mold, obtaining a regular and constant section and the best compactness of the product, whether it is de-aerated or vacuum, both in the molding stage and for possible re-pressing after cooking.
Pressing is done first by acting on the lid and then on the anchor arms, which, pushed upward from below, hook the lids; on leaving the mold, the springs develop their force.
In the automatic version, the operator only has to position the lid above the product; the product goes into the press, on a suitable conveyor belt, and then comes out the other side to the stacking or loading systems on overhead conveyors.
