Traditional molds for products for cooking, made of aluminum or stainless steel, require pressing of the lid in order to bring the muscle bands closer together, during cooking and cooling, and to optimize the binding effect of denaturing soluble salt proteins. Pressing should therefore allow parallelism of the lid with respect to the bottom of the mold, whether there are two or more compensating springs, by hooking its arms to the edge of the mold.
In the event of a large weight loss due to cooking, it is necessary to restore the compacting force of the springs by compressing them during the repressing of the molds, which is normally carried out while hot.

The automatic mold press can be fed directly from our deaerators for traditional or vacuum-cooked products. The pressing head is equipped with very strong pressing elements that allow the safe straightening of the lid before pressing the handle, resulting in the hooking of the arms to the edges of the mold. The double action of the pressing head, thanks to high forces (up to 750 kg on the lid and as much on the handle) and differentiated timing ensures the perfect flatness of the closure.
The molds are unloaded onto a roller conveyor, or a downstream belt, for manual or automatic positioning of the molds on trolleys, frames, and suspended tray conveyors.
