Description

“SMOKE” is a system created to smoke small quantities of products such as cold cuts, cheese and fish. This small system works with only one trolley and has an internal system of smoking made with a manually loaded smoke generator. There are two “SMOKE” models, for trolleys of: 85x100x182H (SMOKE 180) and for trolleys of: 100x100x200H (SMOKE 200). Production capacity varies according to the type of product to be treated. This machine may also be combined with our drying and maturing mini chambers to make “matured” smoked products. Ventilation system: Ventilation inside the chambers is carried out by means of two side ducts placed high up, which convey the flow of ”treated” air downwards along the walls. Then, deflectors placed a few centimetres away from the floor send the descending flow towards the centre of the room where it is intercepted by the ”air recovery system” placed on the ceiling of the chamber, which forces it to ventilate the product uniformly. The air exchange phase may be manually managed by means of the control panel located next to the door. Electronic control: The system’s control system is completely manual and is simple and intuitive.
