SystemThe fryer features two frying baskets and a central unloading table. Baskets travel on rails into the cooking hoppers. Once cooking time is set, the system runs automatically: the active basket descends and frying begins; the sequence is repeated for the second basket. When a load is cooked, the lift raises the basket, it is drawn to the unloading table and the damper lever is pulled to discharge the product. The cycle continues until all batches are processed.
Frying BasketEach frying basket holds 8 + 8 kg of product. Baskets run on rails, exit the frying hopper and are pulled into the discharge hopper. Pulling the discharge arm opens the damper beneath the basket and discharges the product into a GN2/1 gastronorm pan.
Long Oil LifeHidden tubular heaters are positioned out of direct contact with the oil to reduce burning and deformation risk. Each frying hopper contains four tube heaters. Frying is managed with temperature control devices to preserve oil quality.
