How it worksOhmic heating applies high voltage to the product flowing inside the heat exchange unit so the liquid acts as an electrical resistance and generates heat by the Joule effect. Higher voltage and higher electrical conductivity accelerate temperature rise. In particulated products (e.g. dices), the centre of particles heats at the same rate as the liquid carrier, preventing overheating and preserving product quality.
