The scalding machine, completely made of stainless steel, is used in the mortadella’s processing for heating and washing the fat. It includes one or more cylindrical tanks, depending on production needs, in which the cubed fat is first warmed up and then washed by a filter with rotating perforated bottom for the product rinsing and drying. The automatic working system allows to obtain a high quality product by reducing the fat weight loss to the minimum without damaging it and avoiding smashing.
