An evaporator effects a liquid-to-gas phase change, either partial or complete. It is used in research and industry to concentrate solutions by removing the solvent (e.g., water) through the application of heat or use of a vacuum for heat-sensitive substances. Evaporation should not be confused with drying, which removes moisture or solvents from a solid.
The term evaporator also refers to a heat exchanger in which a liquid is vaporized by the heat supplied by another fluid. For example, in a compression refrigeration system a liquid refrigerant is vaporized after absorbing heat from its surroundings or from a secondary heat-transfer fluid. Here, the evaporator constitutes the cold source.
