Pot Digester Electric PDE (60, 100, 160, 200, 250 liters) is a modern high-tech universal industrial equipment designed for the preparation of a wide range of products:
• Confectionery industry – sugar syrup, invert syrup, condensed milk, confectionery or chocolate glaze, jam, marshmallow mass, caramel mass, any confectionery mass, fillings, marmalade, vegetable and fruit mass, etc.
• Culinary production – preparation of second and third courses at catering establishments: broths, vegetables, side dishes, compotes, drinks, sauces, as well as boiling water.
• Dairy industry – boiling milk.
Features of the equipment operation depending on the heating environment:
1. Work on water
They are mainly used for kindling chocolate glaze (tempering containers), light-alloy fats. In this case, the water in the pot jacket is not brought to a boil.
2. Work with food grade glycerin or oil
Main application is the confectionery industry. A feature of this type of pots is a significantly higher operating temperature, therefore they are used for cooking syrups (the cooking temperature of invert syrup, for example, is 110 ° C), marmalade. In this case, the operating temperature can reach 200 ° C.
